Guene’s Southern White Peach Cobbler

story behind this goodie: I am sure most of you think the word Guene and Southern would never be in the same line, but you are wrong… For those of you who know me know I love my cowboy boots, line dancing, and LOVE cooking southern food especially baking desserts. I made this amazing dessert a’ la mode for my friends last fall and they LOVED it! The original recipe is from allrecipes.com however I used White Peaches instead, and quite frankly it was just to die for.

Peach Ingredients

  • 7 fresh WHITE peaches – peeled, pitted and sliced into thin wedges
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch

Cobbler Ingredients:

  • 1 cup all-purpose flour
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, chilled and
  • Cut into small pieces
  • 1/4 cup boiling water

Topping Ingredients:

  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon

Directions

  1. Pre-heat oven to 425 degrees F (220 degrees C).
  2. Peel, pit and slice peaches.
  3. In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch.
  4. Toss to coat evenly, and pour into a 2 quart baking dish.
  5. In 2 quart pan spread first batch of ingredients.
  6. Bake in preheated oven for 10 minutes.
  7. Meanwhile, in a large bowl ( this will be cobbler topping), combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt.
  8. Sliced chilled butter and bowl of ingredients
  9. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in boiling water until just combined.
  10. Mix until combined.
  11. Remove peaches from oven.
  12. Add drop spoon-fulls of cobbler topping over them.
  13. Lastly, sprinkle entire cobbler with the sugar and cinnamon mixture.

Bake until topping is golden, about 20 minutes

Serve warm with French Vanilla ice cream
